Each vintage, our Para Pato bottling, named after Mar's dad Fausto "El Pato" Sosa, is home to our most experimental wines. This edition it's a non-vintage blend of 90% 2020 Viognier, and 10% 2014 Viognier. The latter is rendered as a rancio sec style wine. If you're not familiar with rancio sec, it's a unique style found in the Roussillon- the wine is aged oxidatively outdoors, resulting in wines whose exposure to air, heat, and time make them pretty impervious. In our case, we uncorked our bottled 2014 Viognier in 2018, splitting it into vessels with more headspace so it would age oxidatively, and aged it outdoors until spring of 2020, when we consolidated everything back into a small keg, about 10 gallons total. We then combined this with a barrel of 2020 Viognier, in a move inspired by old school Rioja blanco, where the young fresh white wines would sometimes be combined with a small amount of Sherry (check out CVNE's "Monopole" bottling for a modern example). The end result is a thrill ride. There is the tropical fruit of young Viognier, given that this is mostly 2020 from a topped-up barrel, but it is complicated by struck rock, roasted nuts, garam masala, and an impression of deep minerality. Adorned with a label featuring Fausto's flute (which then became Mar's), and topped with sapphire wax (Pato's favorite color). We produced just 41 cases of 500 ml bottles, so get it before it's gone.
